UBC Continuing Studies, in association with the UBC Wine Research Centre of the Faculty of Land and Food Systems, and in partnership with Fine Vintage Ltd., offers a unique program in wine education to engage and educate adult learners of all levels of wine knowledge.

Fall 2009

Understanding Wine: An Introduction I

Expertise level: beginner to elementary
Unlock the mysteries of wine and begin to build a strong base for lifelong wine appreciation. Sensory training, an introduction to wine vocabulary, and tasting major varietals help build your ability to discern distinct flavours and nuances from many types of wine. Learn how to shop and read label information, discover how wines age and learn how to choose wines to pair with different foods.

A wine instructor from UBC provides an introduction to the world of wine. The instructor will be available for wine consultation for a half-hour after the end of each class. Each participant receives a starter kit, consisting of six wine-tasting glasses.

Understanding Wine: An Introduction II

Expertise level: elementary to intermediate
Ready for the next step in exploring the fascinating flavours and styles of wine? In this second-level course, practise more advanced sensory techniques including scoring wines. Presentations on cultivation, terroir, and winemaking demonstrate how a wine’s distinctive taste is influenced by geography, the winemaker’s methods and the age of the wine. Take a taste-tour of the world’s major wine regions with tutoring on how to decipher wine labels.

Understanding Wine: Wines of Europe

Expertise Level: Elementary to Intermediate
Something is happening to Old World wines! Ancient stone cellars still hold dusty bottles of wine infused with tradition and enticing aromas, but now there appear flavours made with innovative and youthful expression. France, Italy and Spain, the three largest wine-producing countries in the world, founded and developed the modern basis for wine-growing and winemaking. This course explores classic wines, looking at major regions, winemaking approaches, and regulations governing wine production. A review of basic wine appreciation technique will also be covered. Each participant receives a starter kit, consisting of six wine tasting glasses.

BC wines are growing in popularity and have steadily increased their reputation, earning prestigious international awards. Find out what wineries to visit in BC and discover some easy ways to pair your special occasion with a BC wine.

Elementary to Intermediate
JAMES CLUER, Master of Wine
Ready for the next step in exploring the fascinating flavours and styles of wine? In this second-level course, practise more advanced sensory techniques including scoring wines. Presentations on cultivation, terroir and winemaking demonstrate how a wine’s distinctive taste is influenced by geography, the winemaker’s methods and the age of the wine. Take a taste-tour of the world’s
major wine regions with tutoring on how to decipher wine labels. A UBC Continuing Studies wine instructor reviews these techniques and discusses food and wine pairing.

JAMES CLUER is one of only three Canadians to have achieved the Master of Wine qualification, which is generally regarded in the wine industry as one of highest standards of professional knowledge.

Note: For Understanding Wine courses, a $50 administration fee is deducted from refunds. Refunds
are not possible later than three working days before the beginning of the program for part-time courses and later than one week before the beginning of the one-week summer intensive programs.

 

 

Wine Certification (WSET®) Courses

Fine Vintage Ltd, in partnership with UBC Continuing Studies, offers the world’s foremost wine education courses with certification. The UK-based Wine and Spirit Education Trust (WSET®) is internationally recognized as the gold standard in wine education and offers students the opportunity to gain formal certification.

The courses are taught by BC’s leading expert on wine, James Cluer, who is one of only three Masters of Wine in Canada. The Master of Wine is the highest credential in the field with just 264 masters worldwide.
